Semiya Halwa (Diwalicontest)
Ingredients
Vermicilli : 200 gms
Sugar : 100 gm
Ghee : 50 gms
Cashews : 25 – 50 gms
Raisins : 3 - 4 tsp
Elaichi : 2 Nos
Cherry pieces : 5-6
Small quantity of Kesari Powder.
Method
Chop the cashews and crush the Elaichis and Keep aside.
Heat a tsp of ghee in a pan and put the choped cashews and raisins and fry until golden brown and keep aside. In the same pan add another 2 tea spoons of ghee and fry the vermicilli until golden brown and keep aside.
In the same kadai, add 400 ml of water and allow it to boil for few minutes. Then add a small quantity of kesari powder to it. Add the vermicelli to the boiling water. Stir slightly and simmer the flame and cook till the water is absorbed. Now add ghee and stir well. Then add the sugar and mix well for another few mins. When it is fully cooked (when it is soft), add the fried cashews and raisins, crushed elaichi and mix well. Garnish with Cherries and serve hot!
